Back to school

I have been a registered dietitian for three years and out of college for four years. I decided this year to go back to school to further my education in the culinary arts, which I figured would be all play and no work. How hard could cooking be? Well I was very wrong. The first day they gave us a bunch of books to read, homework to do and DVDs to watch. After a few days of classes I have realized that I have matured and grown up a lot at the ripe old age of 27.

I am in a class with bunch of 18 year olds. It's funny to see where their priorities are. Their biggest concern is where the big party will be this weekend. I remember when that was important. Now you worry about bills, bills and more bills. Parties?? What is that?

I am really enjoying the classes and learning a whole bunch. My goal to take all these un-healthy meals I am learning to cook and make them healthier. Chef, is always yelling at me "stacy more butter" "stacy not enough salt" He gave me seven huge tubs of butter and told me to melt them. I asked him if we are going to use all of them today? He said yes. I told him this is a dietitian's worse nightmare. He rolled his eyes at me and laughed.

You can make your own. Get low fat vanilla ice cream or yogurt, mix in low fat caramel syrup and add dark chocolate shavings. Getting the same flavors and less fat. ENJOY :)
